Mama’s Scones- Simple Sunday Bake

Sunday’s are always a great day to relax or practice self-care and in my case, baking simple recipes are always a treat. I’ve chosen to bake my mom’s simple, fluffy Amasi Scones and pulled out my grandmother’s special Royal Albert-tea set to have the tea with these delicious scones. This is my coping mechanism for homesickness and a delicious taste of home!

Amasi Scones


3 cups cake flour

3 tsp baking powder

1/2 cup sugar

pinch of salt

125g butter/ margarine

2 eggs

1 cup of amasi

1 tsp vanilla essence


Preheat the oven to 180 degrees Celsius and prepare your baking tray and line with baking paper. Sift your dry ingredients into a large bowl and rub in the butter with your fingers until the mixture resembles breadcrumbs. In a separate bowl whisk the eggs, amasi and vanilla essence and then add to the dry ingredients. Gently combine the dough and transfer the dough mixture onto a floured surface. Do not over mix the dough. Use a floured rolling pin and roll to 2cm thickness and cut into circles with a cookie cutter. Brush the top with a whisked egg and then bake for 15-20 minutes.
